Just bought a 98 3,5l V6 pajero and was wondering in your opinions, what are the essentials when "kitting" it out.

Welcome to the forum and welcome in the Pajero-world.
To answer your question:
There are no "essentials" required. That car is awesome in standard trim.
More importantly, give us an idea of what you want to do with the car. If you plan to do difficult trails and challenges, you should consider a lift and protection plates under the car. If it's for overland-type holidays; then roof rack, compressor, inverter, maybe a drawer system and stuff like that could be handy.
If I were in your position, my first spending on the car would be to make sure the best and correct oils are in the engine, gearbox and diffs. That 3.5V6 twincam motor is a real beaut, but can easily develop a tick-tick "tappet" noise if you feed it less than perfect oil.

I will mainly be using it for camping trips to the game reserves for now but will definitely be looking to start overlanding in the hopefully not too distant future
Yes the first thing to do when i take ownership will be oil and filter changes.
After some research it seems the DELO 400 multigrade is one of the best?
Can you advise what oil is best for transmission(it's an automatic) and diffs.
I have already designed a drawer system and am putting a list of the basics together ie. medical kit, some recovery kit, spots, spade etc.
There is a dual battery system already installed so I just need to how it's been connected to make provision for extra 12v outlets( seems hella are the preferred type) and an inverter (300-500W or so)
In your opinion which compressors are the most effective without breaking the bank too much.

For the tranny and diffs - buy direct from the dealer.
I have no compressor opinion - just don't go too small/cheap
