I must say, Im pretty surprised by those listed tyre pressures.
I've been running Cooper Discoverer STTs for about 4 years now
(31x10.5's) and they are AWESOME.
Mine were pretty quiet on TAR up until about 6 months ago (a buddy even told me they were quieter than his BFG A/Ts that he had on his Pajero.
Although, I was running my Tyre pressures as follows:
Tar / Sealed roads: 2.5bar all round.
Heavy Gravel: 1.8 - 2 Bar - running at speeds of 80 - 120kph (although on lower pressures, I run lower speeds)
I also find that these Tyres make the Pajero seem MOST stable running on Gravel, at 1.8bar, more stable than any other situation, it feels like your on a train track.
Rocks trails: 1.4 - 1.5Bar
Rocky / Sandy trails: 1.2Bar
Sand: 0.8bar to 1.1Bar.
With these pressures in mind, nothing has yet stopped my Pajero, other than (earlier on) inexperienced driving skills.
I have no diff lock, or T/C, and attribute the 'go-anywhereness' to these tyres.
IMO theyre wearing a little quicker than I imagined they would, but have yet to lose any chunks or anything like that.
The wear could be attributed to the fact that they should maybe be pumped to 3Bar for TAR.
But that said, I really think they are awesome.

And so the time has come to replace my Cooper SST's that are now almost worn down to the casing. These tires not only met my expectations, it exceeded them more than 100%.
Before I mention any milage figures I have to first explain how I drive/use my Pajero: My normal driving includes: 10% tar, 65% gravel roads and 25% serious off road work.
The standard tires that came with my Pajero from the factory was down to canvas in 10'500km and that is when I replaced the suspension and fitted the Coopers. The Cooper tires lasted an amazing 23'000km, double that of the standard factory tires.
The SST's hate towing. On a single trip over a distance of 3400Km I lost more than 6mm of tread, proving that these tires are definitely not suited for towing.
On rocks, mud, snow and hard pack these tires are amongst the best I have ever used. They stick to the surface like chameleon feet!
On sand they have good floatation, but you have to be feather footed on the pedal or they do what they do best and that is to cut through the surface to look for a more stable surface below. In sand that will result in some shoveling, jacking and bridging to get going again!
On loose gravel they tend to sandblast any surface that may be exposed. My plastic wheel well linings got worn through and had to be replaced.
The only complaint I have is that the Coopers have shot up in price to just under R4k per tyre from the R2.8k which I paid 18 months ago.

Tyre guy tried to sell me a set of Coopers at R3200-00 per tyre, but if this is the sort of mileage one can expect, I'd rather stay clear.
