There are a lot of small things to check - I'm sure many can add to this list...
Big thing is you want to check whether the engine was abused. If not, the engine will do multiples of its current mileage.
Things I read about and did before buying:
- get the service record / claim history from Mitsubishi. If the owner towed a lot of heavy stuff, the rear shocks were probably replaced under 70k km
- have a look at the types of things replaced - the car I bought had virtually nothing other than service items on the history up to 60k. I'm now at 100k, and the only extras I've needed was the radiator cap and the alternator belt. (and the dash fix)
- check for oil in the engine coolant, and for water in the engine oil (white layer on top of dipstick oil reading)
- look at the interior - If damaged a lot, engine was probably abused as well
- look under car for damage - dented / repaired bash plates, cracked fuel tank cover, etc
- If it has a tow bar, there's a recent thread that describes the way it should look.
In general, take a few Pajero's for test drives - even some later year 2005 and up gen 3s and have a feel for how the engine reacts and sounds. Make sure this one does not have any dead spots or extra turbo lag. The pajero turbo does whine a bit, so you need to determine whether this one does it a lot more that the others.

Biggest cost factor is a failed engine.
Factor into the price an injector test/service (after purchase) and compression test (before purchase).

Thanks Marius. I read about your finding on the treg yesterday

 condolences!
Do you have an indication what those would cost? And should they be done regardless of whether where are any symptoms or not? Lastly, should you get them done at a mechanic (like mitspro) or are there specialists that are better suited for that?
