3.2 DiD overheat

Hi my shogun 3.2 DiD 2003 overheated when towing, I have towed once before all OK, a few big hills and it was OK but tried using gears to more speed uphill all fine till last hill temperature went to H on gauge but didn't overheat, got to campsite OK, topped up water about half a pint and didn't use car again till coming home, first bank and it was in the H on gauge again it's never passed half way on gauge before, put on heater no hot air, rad was quite cool at bottom, had to put in about 3 litres of water but OK now any ideas please Andy.
