Will there be an impact on the stability control of the Pajero when towing a 1ton trailer? I read somewhere that the ECU might interpret readings it receive incorrectly and you can potentially end up in an accident.

I do not believe that. How is it even possible?
I towed a variety of heavy loads over the years, and never experienced anything but total stability on 3.2DiD LWB, 3.8V6 SWB and 3.8V6 LWB models.

They were built for towing. Just make sure your towbar has at least 3, prefereably 4, bolts attached to the chassis per side as they tend to tear the chassis if not of a good quality with enough attachment points when towing heavy loads.
